For the Cookie Dough:
- 1½ cups (144 g) almond flour
- ¼ cup (64 g) peanut butter
- 1 teaspoon (5 mL) pure vanilla extract
- ¼ teaspoon (1.5 g) kosher or fine sea salt
- ¼ cup (60 mL) pure maple syrup or agave nectar
- ¼ cup (45 g) dark chocolate chips
For the Smoothie:
- 1 frozen banana
- ½ avocado
- 3 dates, , pitted
- 1 cup (240 mL) milk of choice (I use plant-based milk)
- ½ teaspoon (1.5 g) blue spirulina superfood powder*
- ¼ teaspoon (1.25 mL) pure vanilla extract
Optional toppings:
- Chocolate covered chia seeds
- Cacao nibs
Instructions
- First, make the cookie dough. Place all the cookie dough ingredients in a medium bowl and stir together until a dough forms.
- Add all the smoothie ingredients to a blender and blend until smooth. Spoon the smoothie into a bowl and top with cookie dough, chocolate covered chia seeds, and cacao nibs.
Notes
*If you use green spirulina, it won’t turn out the “Cookie Monster” blue color. Spirulina is a powerful antioxidant and is packed with nutrients, making it a healthy addition to smoothies. You can find blue spirulina superfood powders online or in select health food stores; there are a variety of brands available. The blue powder is also a good natural food coloring.
