“Cookie Monster” Smoothie Bowl

Ingredients

For the Cookie Dough:

  • cups (144 g) almond flour
  • ¼ cup (64 g) peanut butter
  • 1 teaspoon (5 mL) pure vanilla extract
  • ¼ teaspoon (1.5 g) kosher or fine sea salt
  • ¼ cup (60 mL) pure maple syrup or agave nectar
  • ¼ cup (45 g) dark chocolate chips

For the Smoothie:

  • 1 frozen banana
  • ½ avocado
  • 3 dates , pitted
  • 1 cup (240 mL) milk of choice (I use plant-based milk)
  • ½ teaspoon (1.5 g) blue spirulina superfood powder*
  • ¼ teaspoon (1.25 mL) pure vanilla extract

Optional toppings:

  • Chocolate covered chia seeds
  • Cacao nibs

Instructions

  • First, make the cookie dough. Place all the cookie dough ingredients in a medium bowl and stir together until a dough forms.
  • Add all the smoothie ingredients to a blender and blend until smooth. Spoon the smoothie into a bowl and top with cookie dough, chocolate covered chia seeds, and cacao nibs.

Notes

*If you use green spirulina, it won’t turn out the “Cookie Monster” blue color. Spirulina is a powerful antioxidant and is packed with nutrients, making it a healthy addition to smoothies. You can find blue spirulina superfood powders online or in select health food stores; there are a variety of brands available. The blue powder is also a good natural food coloring.
