Citrusy Baby Greens with Olives & Goat Cheese

Ingredients
- ¼ cup (60 mL) lemon juice
- ¼ cup (60 mL) extra-virgin olive oil
- 1½ tablespoons (22.5 mL) raw honey
- ¼ teaspoon (1.5 g) kosher or fine sea salt
- ¼ teaspoon (0.5 g) freshly ground black pepper
- 4 cups (112 g) mixed baby winter greens, such as spinach, mizuna, chard, and kale
- 4 blood oranges , peel and pith removed, sliced
- 2 navel oranges , peel and pith removed, segmented
- 2 dozen mixed Greek olives or kalamata olives
- ½ cup (70 g) goat cheese crumbles or a dairy-free substitute
Instructions
- Whisk together lemon juice, olive oil, honey, salt, and pepper; set aside.
- Divide greens and blood and navel orange slices between 4 serving plates. Drizzle with dressing.
- Top each salad with 4-6 olives and cheese.
