Chicken Nugget Skewers

Ingredients

  • 10 ounces (300 g) chicken breast, skinless and boneless
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon powdered chili
  • 2 large eggs
  • 2 tablespoons olive oil
  • 2 ½ cups gluten-free corn flakes , finely crushed
  • 10 ounces (300 g) yellow cheese, diced (preferably Emmental, Jarlsberg or Gouda)
  • 16-20 cherry tomatoes
  • 1 handful fresh oregano leaves for decoration

Instructions

  • Preheat the oven to 400ºF. Line a large baking sheet with parchment paper.
  • Clean and pat dry the chicken, cut into bite-size pieces. Season with salt, pepper, and chili. Lightly beat the eggs in a bowl, add olive oil and mix. Dip each chicken cube into the egg mixture, then use a tong to grab each chicken nugget and toss into the crushed corn flakes. Transfer to the baking sheet. Bake in the oven for 15-20 minutes until cooked through. Remove from the oven and set aside for 15 minutes to cool.
  • Prepare some decorative skewers. When the chicken nuggets have cooled, stick the ingredients on the skewers in the following order: first a cube of cheese, then a piece of chicken, and finally a tomato. Garnish with fresh oregano and arrange on a serving plate.
