Warm Vanilla Chia Seed Pudding with Caramelized Bananas

- 1 (13.5 ounce) can full fat coconut milk
- 6 tablespoons chia seeds
- 2 tablespoons maple syrup
- 3 teaspoons Singing Dog Vanilla Pure Vanilla Extract , divided
- 2 tablespoons dairy free butter
- 2 tablespoons brown or coconut sugar
- 2 bananas , sliced about ½ inch thick
- Toasted coconut flakes
- Optional garnishes:
- Cinnamon sticks
- Star anise
Instructions
- Combine coconut milk and chia seeds in a small saucepan. Heat over medium-low heat until it comes to a low simmer. Continue to cook, stirring often for 2-3 minutes or until thickened to your liking. Stir in the maple syrup and 2 teaspoons vanilla.
- In a skillet, melt butter over medium heat, add the brown sugar, 1 teaspoon vanilla, and banana slices. Cook for 2-3 minutes or until syrupy.
- Top pudding with caramelized bananas and coconut.
- Garnish as desired.
