Hatch Chili Chicken Salad

Ingredients 

  • 2 cups cooked chicken, , shredded
  • 1 (4 ounce) can Hatch Diced Green Chiles, mild or hot
  • ½ cup celery, , chopped
  • ¼ cup finely diced red onion
  • ¼ cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • ½ cup mayonnaise or egg-free mayonnaise
  • 1 tablespoon fresh lime juice
  • Kosher or fine sea salt, , to taste
  • Freshly ground black pepper, , to taste

Instructions 

  • Combine chicken, chiles, celery, onion, cilantro, and cumin. Add the mayonnaise and lime juice and stir until fully combined. Season to taste with salt and pepper. For best flavor, chill, covered for 30 minutes.
  • Serve on lettuce leaves, in sandwiches, or with crackers.
