Gluten Free Lemon Tahini Dressing Recipe
We are eight days into a new year and so far so good for me and mine. I hope you can all say the same about you and yours!
I have been giving thought lately to the ways in which one changes one’s life. There are the big ways, i.e. a marriage, a new baby, a new job and then there are the little ways. When it comes to improving my health or loosing those nasty holiday pounds I have tended in the past to only think in terms of BIG CHANGES! Right now! Get healthy overnight.
Of course I made a big change in my overall health when I gave up gluten and started to let my body heal. And this was a change that needed to be made quickly and definitively – kind of like ripping off a band-aid. But I have come to realize that there are small ways I can increase my health that can be pleasant and reap good rewards.
One of those ways is to eat more fresh, raw vegetables. Hello, salad. Now I ask you, how hard is it to eat some salad? Well, it can be a bit boring to eat raw veggies day after day and it is a little hard to get super excited about a big bowl of lettuce sometimes. But then the solution is yummy salad dressing.
For me, the challenge is to make salad dressings which are healthy and don’t undo all the good I do by eating the damn salad in the first place. If I am going to choose lettuce over ice cream then by gosh I had better not undo that goodness by loading on chemical-filled fattening dressings.
This Gluten Free Lemon Tahini Dressing Recipe is a nice change of pace, is delicious and oh-so-good for you! It is very flavorful so a little goes a long way (great when every calorie counts!)
Tahini is a main ingredient which comes from sesame seeds and can easily be found in the raw version and organic. While high in fat, it is good fat and it is loaded with all sorts of things that reduce the aging of the cells in the body like vitamin E and amino acids. Hey, anything that reduces age anywhere in my body is a welcome addition!

Seems it was about a year ago that you shifted your attention from your crashed adrenal blog to this one. Well, you’re a true artist. Lovely photos, lovely recipes, good writing. I’ve enjoyed following the transition from one to the other.

This looked so good but it was crazy bitter. What brand of tahini are you using? Anyone have a suggestion. I have never tasted tahini before but found it really bitter.
