Oven Roasted Coffee Molasses Pork Chops Recipe

If you love pork chops but can’t stand it when they get all dried out – try oven roasting them, like I did in this Oven Roasted Coffee Molasses Pork Chops recipe!

Roasting is my secret weapon for luscious food, whether it be large cuts of meat, vegetables, or in this case – pork chops. I’m sure there is some scientific reason why roasting makes food taste so good but right now I am less concerned with science than I am about getting dinner on the table!

I start these pork chops in the morning making a marinade of leftover coffee, molasses and a few other ingredients and letting the chops sit in the fridge all day. Then when I get home from work, it’s just a matter of giving the chops a quick sear on the stove, roasting them for about 6 minutes in the oven, and turning the marinade into a delicious sauce. Easy peasy!

Ingredients

  • 1 cup strong coffee cooled
  • ½ cup Wholesome! Organic Molasses
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon red pepper flakes
  • 1 1 inch piece fresh ginger finely grated
  • 4 (8 ounces) pork chops 1 inch thick each
  • Kosher salt
  • Black pepper
  • 1 tablespoon vegetable or grapeseed oil

Instructions

  • Combine the coffee, molasses, vinegar, mustard, Worcestershire sauce, red pepper flakes, and ginger. Pour into a food storage bag. Add the pork chops and refrigerate for 8-10 hours.
  • Preheat oven to 400 degrees. Remove the chops from the marinade and pat dry. Season generously with salt and pepper. Pour the marinade into a sauce pan, bring to a boil, reduce heat and simmer until you have about ½ cup of sauce, about 10 minutes.
  • Heat the oil in an oven proof skillet over high heat until very hot. Sear the pork chops for 2-3 minutes or until browned, flip the chops and place the skillet in the oven. Roast for 6 minutes or until the chops reach an internal temperature of 145 degrees on an instant read thermometer. Let sit for 5 minutes before serving. Serve with the sauce.
