Blood Orange Chicken

This is probably one of the easiest and most delicious chicken recipes ever made. The cumin and the blood orange are a match made in heaven. Better yet, it can be on the table in about 30 minutes.

Ingredients

  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons kosher or fine sea salt
  • Zest of 3 blood oranges
  • 1/3 cup extra-virgin olive oil
  • 3½ - 4 pounds chicken thighs with or without bones/skin
  • 5-6 orange slices

Instructions

  • Preheat the oven to 425ºF. In a large bowl, mix all the seasonings together. Add the orange zest and olive oil. Add the chicken and thoroughly coat with the spice mixture.
  • Place the chicken in a cast iron pan or Dutch oven and place the orange slices on top. Roast for 30 minutes or until the chicken registers 165ºF with a meat thermometer.
