Ingredients

  • ½ teaspoon dry yeast
  • ½ teaspoon cane sugar
  • cup warm milk about 90°F
  • cup tapioca starch
  • cup gluten-free oat flour
  • cup corn flour
  • cup teff flour
  • ¼ teaspoon kosher or fine sea salt
  • ½ teaspoon dried herbs oregano, basil, thyme
  • 2 tablespoons extra-virgin olive oil

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • In a large bowl, combine yeast, sugar, and warm milk. Let sit for 5 minutes to activate.
  • Sift the starch and all the flours together into another bowl. Add salt and herbs and mix until well combined. Make a well in the dry mixture and add the yeast mixture. Add the olive oil, then stir together until combined and it begins to form a smooth dough.
  • Roll the dough into a ¼-inch thick circle. Put the pizza dough on the baking sheet and pre-bake for about 10-15 minutes.
  • Remove from the oven and top with your favorite pizza toppings, then bake it again if called for in the recipe directions.
