Gluten Free French Toast Casserole Recipe

I love French toast but I don’t always love making it. Standing over the stove, watching to make sure the bread doesn’t burn, flipping it one piece at a time, and repeating for each serving. It’s fine if it’s just for you and another person, but if you want to feed a larger family or maybe even entertain for brunch, this Gluten Free French Toast Casserole recipe gives you the same flavors and texture of French toast, without the hands-on time.

Simply mix it up, then let it sit for 30 minutes while you preheat the oven, make a pot of coffee, prepare other dishes, shower, or even lay in bed a little longer! Then, while it bakes, you can get some other things done in your morning routine and before you know it, you have an extra-special breakfast that can serve a small crowd.

Recipe notes: You can use any kind of milk for this and dairy free butter, in case you or anyone you’re feeding is dairy free. The gluten free bread I used (Kinnikinnick) is also dairy free.

Ingredients

  • 6 large eggs
  • cups milk any kind
  • ¼ cup pure maple syrup plus more for serving
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher or fine sea salt
  • 12 slices Kinnikinnick gluten free bread
  • 4 tablespoons butter or dairy free butter substitute melted

Instructions

  • In a large mixing bowl, whisk together the eggs, milk, maple syrup, vanilla, cinnamon, and salt. Cut the bread into 1-inch cubes. Add the bread to the egg/milk mixture. Stir gently to combine. Let sit for 30 minutes, stirring gently occasionally.
  • Preheat the oven to 375 degrees.
  • Pour the bread mixture into a large cast iron skillet or 9x12-inch baking dish and gently press down with a spatula. Top with the melted butter and bake for 55 minutes or until golden brown and set. Let cool for 5 minutes before serving. Serve with extra maple syrup.

    I have not seen that brand of bread available near us . Would Udi’s or Rudy’s work just as well ? How many slices to a pound loaf are there ?? Sounds like a great idea when my son and family come for the week of Christmas.
