Gluten Free Mashed Potato Pancakes Recipe

Ingredients
- 2 cups mashed potatoes
- 1 large egg
- ¼ cup gluten-free all-purpose flour
- ¼ cup minced chives plus more for serving
- Kosher or fine sea salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons olive vegetable, or coconut oil
- Sour cream for serving if desired
Instructions
- Combine the potatoes, egg, flour, and ¼ cup chives and mix well. Taste and add salt and pepper, if needed. Form into patties, using about ¼ cup per patty.
- Heat oil in a large skillet over medium heat. Fry the pancakes about 2 minutes per side or until golden brown and warm.
- Serve, topped with sour cream and chives, if desired.
