Vegan Peppermint Hot Chocolate Recipe

Ingredients
- 2 cups unsweetened almond milk
- 2 cups boiling water
- 3 tablespoons cacao powder
- 1 teaspoon pure vanilla extract
- ¾ teaspoon pure peppermint extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon monk fruit extract or 2-3 tablespoons maple syrup/agave
- Optional toppings:
- Vegan whipped cream
- Crushed peppermint candies
Instructions
- Put all ingredients into a high-powered blender. Blend on high until smooth and serve immediately. Top with whipped cream and peppermint candies, if desired.
