Peachy Bourbon Baked Beans

Ingredients
- 2 (14.5-ounce) cans white cannellini beans, drained and rinsed
- 1 (14.5-ounce) can pinto beans, drained and rinsed
- 1 (15-ounce) can corn, drained and rinsed
- 2 cups diced fresh peaches (skin on or off)
- 1 cup gluten-free prepared barbecue sauce
- ¼ cup packed dark brown sugar
- 2 tablespoons balsamic vinegar
- ½ cup gluten-free bourbon
- 2 teaspoons chipotle chili powder
- 1 teaspoon kosher or fine sea salt
- 1 teaspoon ground mustard
Instructions
- Use a 6-quart slow cooker. Add the rinsed beans and corn to the slow cooker and stir in the rest of the ingredients. (Do not worry about trying to keep the peach pieces intact; they will break down during cooking.)
- Cover and cook on low for 8 hours, or on high for about 5 hours. Stir well. If you’d like to thicken the sauce, leave the lid off during the last 30 minutes of cooking.
