These days millions of people are sequestered at home, whether because of deciding to self-isolate or because their cities are on lock down. In many cities, restaurants are closed for the time being. Grocery stores may not have everything you’re used to buying and, thanks to hoarders who think only of themselves, may be out of staples.

The times are uncertain right now. Some people are sick, some are isolated, many afraid. I firmly believe that no matter how frightening or unpredictable things seem to be right now, we will come through this – stronger and better than before.

Why? Because humans are basically GOOD! Sure, there are a few rotten apples out there, but it has been proven time and time again throughout history that people rise up in difficult times. People are decent. They help each other. They care for each other. They don’t need to be asked or forced to help or care – they just do. They do it because it is the right and human thing to do. In times of trouble, we forget our differences and unite. We rise and fight. We fight together against evil and disease. We fight to preserve our humanity.

I also firmly believe that if we are not part of the solution, we are part of the problem. If you can, support local businesses by purchasing gift certificates for the future. Order food from local restaurants that can still do deliveries. If you know people in the service industry and have tasks they can perform remotely, hire them to do so. If you can’t do those types of things, then stop contributing to the fear and uncertainty. Instead of buying a year’s worth of water and toilet paper, buy what you need. Instead of posting photos of empty grocery shelves, post photos of local farm stands that still have veggies and fruits to sell. Demand responsible reporting from the media. Instead of fear mongering, spread joy. And, if you need help, ask for it, you will be surprised how many are willing to help!

I don’t know how to cure viruses or solve global economic situations, but I do know how to cook, so that’s what I’m doing. I am certain there is something you do well and that uplifts – do that! Stay busy, stay productive, stay positive! Take the necessary means to keep yourself and others safe. Be kind to each other. Stay in touch with people you know and care about, especially the ones who may be forgotten or neglected these days.

The other day I had a craving for P.F. Chang’s gluten free Mongolian Beef. I couldn’t just go there and have some, so I made do with what I could. There was plenty of beef on the store shelves. No green onions but there were shishito peppers. So, I grabbed a bottle of San-J Gluten Free Mongolian Sauce, the beef and the peppers, and whipped up this dish. You know what? It was delicious!

Gluten Free Mongolian Beef and Shishito Peppers

Ingredients

  • 2 pounds flank or sirloin steak
  • ¼ cup cornstarch
  • 5 tablespoons vegetable oil , divided
  • 1 pound shishito peppers
  • 4 cloves garlic , thinly sliced
  • 2 tablespoons finely grated fresh ginger
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • ½ cup San-J Gluten Free Mongolian sauce

Instructions

  • Thinly slice the steak and cut into pieces about 2-3 inches long. Place the steak in a bowl, add the cornstarch, and toss to coat well.
  • Heat 3 tablespoons of oil in a large skillet over high heat until it starts to shimmer. Add half the beef in an even layer. Let cook for a minute, undisturbed. Stir and cook for another 2 minutes or until the meat is browned. Remove to a plate and repeat with the rest of the steak. Remove that steak to the plate.
  • Add 2 tablespoons oil to the same pan and let heat. Add the peppers and cook, stirring occasionally until they start to blister, about 3 minutes. Add the garlic and ginger and cook, stirring, for 30 seconds. Add the sauce and deglaze the pan making sure to scrap up all the brown bits from the bottom of the skillet. Add the beef back into the skillet and cook stirring for another 1-2 minutes.
