Gluten-Free Apple Cheese Skillet Bread
If you read the name of this recipe – Gluten-Free Apple Cheese Skillet Bread – and thought it was strange to combine apples and cheese, you were mistaken. Trust me on this one! For one, this recipe doesn’t use actual apples. It uses sparkling apple cider. That sounds better already, doesn’t it? The fresh, sweet taste of the sparkling apple cider pairs beautifully with the savory, saltiness of the cheddar cheese.
This dish makes a great side for a variety of dinners, such as a soup and salad meal or maybe even for breakfast with a side of crispy bacon! It uses just 5 simple ingredients (not including salt). One of those ingredients is my very own all-purpose gluten-free flour, which I actually use for all my baked goods. It works cup-for-cup in place of traditional all-purpose flour in all your favorite recipes.
Gluten-Free Apple Cheese Skillet Bread
Ingredients
- 2½ cups Carol’s Gluten-Free All-Purpose Flour
- 2 tablespoons sugar
- 4 teaspoons baking powder
- 1 teaspoon kosher or fine sea salt
- 8 ounces cheddar cheese , grated (2 cups grated)
- 12 ounces sparkling apple cider
Instructions
- Preheat the oven to 450 degrees and generously grease a cast iron skillet.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Reserve about ½ cup of grated cheese and stir the rest into the flour, making sure to coat the cheese with the flour mixture. Stir in the apple cider.
- Spread the batter into the prepared pan, sprinkle the reserved cheese evenly over the top, and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 15 minutes before transferring to a wire rack to finish cooling.
