Thai Coconut Beef

Thai Coconut Beef

Ingredients
- 2 pounds lean beef stew meat
- 1 (8-ounce) jar gluten-free peanut satay sauce (I used the Thai Kitchen brand)
- 1 (13.5-ounce) can full-fat coconut milk
- 16 ounces baby carrots
- ¼ cup chopped peanuts
Instructions
- Use a 4-quart slow cooker. Place the stew meat into the slow cooker insert and add the entire bottle of peanut satay sauce and the can of coconut milk. Stir well to combine. Place baby carrots on top.
- Cover, and cook on low for 8 hours, or until meat is fork-tender. Serve with chopped peanuts on top.
Notes
We serve ours over a bed of white basmati rice for a more complete meal.
