  • 2 medium cucumbers , chopped
  • 2 cups (60 g) spinach, tightly packed
  • 1 clove garlic
  • ½ cup (30 g) parsley, tightly packed
  • ½ cup (30 g) cilantro, tightly packed
  • ½ cup (10 g) mint, tightly packed
  • ½ cup (120 mL) coconut yogurt or yogurt of choice
  • 2 tablespoons (30 mL) lime juice
  • 2 tablespoons (30 mL) olive oil
  • 1 tablespoon (15 mL) pure maple syrup
  • ½ teaspoon (3 g) kosher or fine sea salt


  • Add all the ingredients into a blender and blend until smooth. Chill for at least 2 hours. Serve in bowls.
