Ingredients

  • 4 heaping cups (600 g) watermelon (without rind)
  • 1 medium cucumber , chopped
  • 3 vine tomatoes (about 1 lb/455 g)
  • ¼ cup (30 g) chopped red onion
  • 1 red bell pepper , chopped
  • 1 clove garlic
  • 3 tablespoons (45 mL) lime juice
  • ¼ cup (60 mL) olive oil
  • 1 teaspoon (6 g) kosher or fine sea salt
  • 1 teaspoon (5 mL) agave
  • cup (10 g) fresh basil leaves

Instructions

  • Add all the ingredients into a blender and blend until smooth. Chill for at least 2 hours. Serve in bowls.
