Frozen SunButter & Chocolate Squares
Looking for a frozen treat to cool off? And are you also a fan of cheesecake and fudge? If you answered yes to these, you’ll love these Frozen SunButter & Chocolate Squares – they’re sort of like fudge, in that they are creamy and you can eat them in two bites, but they also have a cookie crumb crust and have a topping that consists of a cream cheese mixture, sort of like a cheesecake … and they’re frozen! Decadent, rich, and simple – a triple threat.
For the crust, I used a box of chocolate cookies that I ground up in a food processor. Next, I topped it with a cream cheese, whipped cream, and SunButter mixture. And finally, a good drizzle of chocolate sauce across the top. The result? Pure bliss.

Frozen SunButter & Chocolate Squares
Ingredients
- 2 cups finely crushed gluten free chocolate cookie crumbs (I used an 8-ounce box of chocolate cookies which I ground in a food processor)
- 6 tablespoons melted butter or dairy free butter substitute
- 1½ cups heavy cream
- ½ cup Creamy Sunbutter
- 8 ounces cream cheese , at room temperature
- ¾ cup sugar
- 1 tablespoon pure vanilla extract
- 2 tablespoons hot fudge or chocolate sauce
Instructions
- Line a 9-inch square cake pan with parchment paper, allowing the paper to over hang on the sides.
- Combine the cookie crumbs and butter well, then press firmly into the prepared pan.
- Beat the cream on high until stiff peaks form.
- Beat the SunButter, cream cheese, sugar, and vanilla until well blended and smooth. Fold in the whipped cream. Spread the mixture over the crust. Drizzle with the chocolate sauce and swirl using a knife or toothpick. Freeze for at least 4 hours.
- Remove from the pan, cut in squares, and serve.
