
Gluten-Free Baked Tonkatsu
Tonkatsu is a Japanese panko-breaded and fried pork chop that is served with a sauce by the same name. This Gluten-Free Baked Tonkatsu is my own version of this classic dish, but with a twist. It’s baked, not deep fried, and the sauce is my own variation.
For the breading, I used Kinnikinnick gluten-free panko-style breadcrumbs. I like to use a combination of black and white sesame seeds because I like the way it looks, but you’re welcome to use all white or all black, depending on what you have available.

Gluten-Free Baked Tonkatsu
Ingredients
For the Sauce:
- ½ cup ketchup
- 1½ tablespoons Worcestershire sauce
- 1 tablespoon gluten-free soy sauce or tamari
- 1 tablespoon mirin
For the Pork:
- 4 boneless center-cut pork chops
- 2 tablespoon vegetable or olive oil
- 1½ cups Kinnikinnick gluten-free panko crumbs
- 2 tablespoons sesame seeds (1 tablespoon black + 1 tablespoon white; or 2 of either)
- ⅓ cup gluten-free all-purpose flour
- Kosher or fine sea salt
- 2 large eggs
- Minced chives for garnish
Instructions
- Combine all the sauce ingredients and set aside.
- Preheat the oven to 400 degrees. Place a cooling rack on a sheet pan.
- Pound the pork chops with the bumpy side of a meat cleaver until they are half the thickness, about ½ inch thick. If you don’t have a meat cleaver, pound with a rolling pin and prick all over with the tines of a fork.
- Heat the oil in a large skillet over medium-high heat. Add the panko and cook, stirring frequently, until golden brown, about 5 minutes. Take off the heat, stir in the sesame seeds, and pour onto a plate to cool.
- Put the flour on another plate and season with a pinch of salt and pepper. Beat the eggs in another plate.
- Season the pork chops on both sides with salt and pepper. Dip into the flour, coating on both sides, then into the egg, then into the panko mixture, pressing down firmly. Place on the prepared pan.
- Bake for 20 minutes or until the pork is done but still juicy and slightly pink. Slice and serve.
