Gluten-Free Almond Honey Fig Cake
Figs have two seasons – early summer and then mid-to-late summer through fall. Since we’re still in fall and able to find figs a plenty, let’s use them up to make a delicious Gluten-Free Almond Honey Fig Cake.
This cake is made with a few simple ingredients that you likely already have on hand – eggs, vanilla, salt, baking soda, and almond flour. The base is simple and is accented by the perfect amount of honey (I use organic honey from Wholesome) and speckled throughout with quartered fresh figs.
This cake is grain-free, dairy-free, and refined sugar-free, making it a healthier alternative to traditional cake.

Gluten-Free Almond Honey Fig Cake

Ingredients
- Gluten free non-stick cooking spray
- 3¼ cups gluten free finely ground blanched almond flour
- ½ teaspoon kosher salt
- ½ teaspoon baking soda
- 6 large eggs
- ½ cup plus 2 tablespoons Wholesome Organic Honey
- 2 teaspoons pure vanilla extract
- 1 pint fresh figs , cut into quarters
Instructions
- Spray a 9-inch springform pan with cooking spray. Line the bottom and sides of the pan with parchment paper and lightly spray the paper. Preheat oven to 350 degrees.
- In a food processor, combine the almond flour, salt, and baking soda and pulse a few times to combine. Add the eggs, ½ cup honey, and vanilla and process until smooth.
- Place the figs onto top of the batter, cut sides up. Bake for 25 minutes, cover the top loosely with a piece of foil and continue to bake for another 20-35 minutes or until golden brown and a toothpick inserted in the center of the cake comes out clean. Drizzle with the 2 tablespoons honey and let cool in the pan.
