Keto Macadamia Nut Brittle

I’ve been on a keto diet for about a month now and with keto comes cravings for sweets, at least that’s the case for me anyways. Recently I made this Keto Macadamia Nut Brittle recipe and this has been a craving-saver! I kept these in the fridge and had a small piece whenever I had a craving for sweets. Totally does the trick.

Believe it out not, this recipe is basically destined to be refined sugar-free. You see, it is actually easier to make this with Swerve than with sugar because the Swerve Confectioners does not crystalize like sugar. Swerve is a cup-for-cup sugar replacement that is zero calorie and non-glycemic, and it’s keto-friendly.

This delicious nut brittle is a great treat when you’re craving something sweet, like cookies or candies!

Ingredients

  • 10 tablespoons unsalted butter
  • 8 tablespoons heavy cream , divided
  • 1 cup Swerve Confectioners
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 2 cups roasted salted macadamia nuts , chopped
  • 1 teaspoon kosher or fine sea salt

Instructions

  • Line a baking sheet with parchment paper.
  • Combine the butter, 6 tablespoons cream, and the Swerve Confectioners in a deep, heavy saucepan and cook over medium-low heat, stirring frequently, until thickened and golden brown, about 10 minutes. If you are impatient, you can turn the heat up to medium but stir constantly, as it can burn quickly.
  • Remove from the heat, stir in the baking soda (it will bubble up) and then the rest of the cream and vanilla. Stir in the macadamia nuts and spread evenly on the parchment paper. Sprinkle on the salt and refrigerate overnight.
  • Break into pieces and serve. Can be stored in an airtight container in the refrigerator for 3-4 weeks.

    Mine went sugary even though I continued to brush down the side with water. But the flavour is good. bit of a waste of my erythritol really?
