Gluten-Free “Piece of Cake” Cake

It has been said you can’t please all of the people all of the time. And while that is very true, when it comes to cake, you can please a lot of the people a lot of the time with this Gluten-Free “Piece of Cake” Cake, a fun way of baking a cake with multiple toppings.

What you need is a gluten-free cake mix (flavor of your choice, I used chocolate), a deep-dish 9-inch pie dish, an 8-slice pie cutter, and a little imagination.

The idea here is to take a cake mix, add a variety of toppings which you can customize to your own preferences and voila, cake that will please – well everyone!

This is also a fun activity for your next family dinner or get together with friends. Prior to having dinner, have the cake mix made and in the pan ready for toppings then let everyone create their own special topping. Pop in the oven and dessert is ready when you are! If doing this, it is best to pick toppings that don’t need to be added after the cake is baked.

Here are some ideas to get you started:

    • Black Forrest – Prior to baking, add chocolate chips and cherry pie filling on top of the cake slices.
    • Peanut Butter Cup – Add a few mini peanut butter cups into the batter prior to baking. Once baked and cooled, top the slice with store bought chocolate frosting and then decorate with mini peanut butter cups that have been cut in half.
    • S’mores – Prior to baking, top with chocolate chips and crushed Kinnikinnick gram style crackers. After baking, top with mini marshmallows and pop under the broiler for a couple minutes or until the marshmallows brown.
    • Caramel Pretzel – Prior to baking, top with broken pieces of gluten free pretzels and a drizzle of salted caramel sauce. After baking and cooling, drizzle a little more caramel sauce and a light sprinkle of sea salt.
    • Cookies and Cream – Prior to baking, top with crush gluten-free KinniTOOS.
    • Coconut – Prior to baking, stir some shredded coconut into the batter then top with coconut flakes.

Ingredients

  • 4 large eggs
  • ¾ cup water
  • ¾ cup vegetable oil
  • 1 (17.6-ounce) box Kinnikinnick cake mix
  • Toppings of your choice , see above

Instructions

  • Preheat oven to 350 degrees. Spray a deep dish 9-inch pie pan and 8-slice pie cutter with gluten free non-stick cooking spray. Whisk eggs, water, and oil together in a mixing bowl. Add the cake mix and continue to whisk until fully combined. Pour into the pie pan and insert the pie cutter.
  • Top the sections as desired. Bake for 25 minutes or until a toothpick inserted into the center of the cake comes out clean.
