Plum-Glazed Pork Chops

Ingredients
- 1 tablespoon (15 mL) extra-virgin olive oil
- 4 bone-in pork chops
- ½ cup (88 g) chopped dried plums (prunes)
- ¼ cup (50 g) dark brown sugar
- 2 tablespoons (30 mL) apple cider vinegar
- ½ cup (120 mL) gluten-free chicken broth
Instructions
- Preheat the oven to 400°F.
- Heat olive oil in an oven-safe skillet or cast-iron pan on the stovetop and add pork chops. Cook on each side for approximately 5 minutes, or until brown. While the chops are browning, combine the dried plums, brown sugar, apple cider vinegar, and chicken broth.
- Remove skillet from the stovetop and evenly spoon the plum sauce over the top. Bake in the preheated oven for 7-10 minutes, or until the internal temperature of the pork is 145°F.
