A simple and delicious accompaniment to any barbecue, this salad pairs perfectly with grilled meats, especially beef or lamb. The quinoa makes it hearty, while the cucumbers and radishes keep the salad fresh and crunchy. In addition to that, there is a delicious lemon and garlic dressing, a fresh bouquet of herbs, and creamy feta. All the ingredients complement each other perfectly. This salad will work beautifully as a nutritious, vegetarian lunch for work, as well as a side dish.

Cucumber Quinoa Salad

Ingredients 

  • ½ cup quinoa
  • 2 cloves garlic, , minced
  • 4 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • ¼ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 15 radishes
  • 1 large cucumber
  • ½ red onion, , peeled
  • 4 ounces feta cheese
  • 4 tablespoons fresh mint, , chopped
  • 4 tablespoons fresh dill, , chopped

Instructions 

  • Start by soaking the quinoa to remove its bitter aftertaste; place it in a bowl of cold water for 30 minutes, then strain and rinse under running water. Drain and cook according to package directions, about 15 minutes.
  • Meanwhile, prepare the dressing. Place garlic cloves, olive oil, lemon juice, and honey in a blender. Season with salt and pepper and blend until smooth.
  • When the quinoa is cooked, fluff with a fork and set aside to cool. Slice the radishes, cucumber, and onions very thinly. Drain the feta and cut into cubes.
  • Place all the ingredients in a bowl, add the dressing, and mix thoroughly. Serve immediately or store in the refrigerator for up to 5-6 hours.
