Salt & Pepper Chicken Lettuce Wraps

Breaded chicken combines with crisp lettuce in this delicious, easy-peasy recipe for Salt & Pepper Chicken Lettuce Wraps. Topped with hoisin sauce, this dish has all sorts of flavors and textures in one – crispiness, tenderness, and umami.

To make this recipe, you’ll need a Chinese Salt & Pepper Meal Kit from Good It’s Gluten Free. For this recipe, I used chicken, then I transformed the meal kit a bit by placing the breaded chicken in romaine lettuce leaves and drizzling with hoisin sauce. The result is fantastic!

  • Combine the batter mix from the kit with 10 tablespoons water. Whisk until smooth. Pour the panko breadcrumbs onto a plate or in a shallow bowl. Coat the chicken in batter, then roll in the breadcrumbs.
  • Add enough oil in a large skillet to come up ¼ inch. Heat over medium-high heat until it begins to shimmer. Cook for 6-8 minutes, turning the pieces occasionally, or until golden brown and cooked through. Sprinkle with the salt and pepper mix from the meal kit.
  • Serve in lettuce leaves drizzled with hoisin sauce and extra hoisin sauce on the side.
