Green Chile Mac & Cheese

As a kid, the only thing I would eat was mac & cheese. It was my ultimate favorite food, and it still is to this day as an adult. This Green Chile Mac & Cheese is something both kids and adults will both agree on and enjoy.

This mac & cheese has Hatch Green Chile Enchilada Sauce in it which gives this dish a little kick to it. After cooking the macaroni, in a saucepan you add the enchilada sauce, half & half, and cumin over medium heat. Once hot, stir in the cheese until it is melted. Then all that is left is combining the macaroni noodles. I like to garnish my bowl with green onions.

This recipe serves 4 to 6 people and is definitely a crowd pleaser. Feel like a kid again and give this Green Chile Mac & Cheese a try!

Ingredients

  • Kosher or fine sea salt
  • 16 ounces gluten free elbow macaroni
  • 1 (15 ounce) can Hatch Green Chile Enchilada Sauce
  • 1 cup half & half
  • 1 teaspoon ground cumin
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions thinly sliced , to garnish

Instructions

  • Bring a large pot of salted water to a boil and cook the macaroni according to the package directions. Drain.
  • In a large saucepan, combine the enchilada sauce, half & half, and cumin over medium heat. When hot, stir in the cheeses until melted. Add the macaroni and stir to combine. Garnish with green onions if desired.
