Buffalo Popcorn

Movie nights are some of my favorite nights and of course the night is not complete without popcorn. This Buffalo Popcorn is a must have at your next movie night. Skip the traditional popcorn and get creative in the kitchen with sweet and spicy popcorn.

To make this movie treat, you add oil to the pan and once the oil is heated you add Eden Popcorn. Then you cover the pot and wait for the kernels to pop. Once the popcorn is done you divide the popcorn between two baking sheets. Then in a small pan you combine the melted vegan butter, brown sugar, corn syrup, and salt and bring it to a boil for 5 minutes and then stir in the Buffalo sauce and boil for another 2 minutes. Then you remove the pan from the heat and stir in the cayenne pepper and baking soda and divide the sauce evenly among the two sheets of popcorn and stir to coat. Once the popcorn is coated you stick the baking sheets in the oven for 1 hour and stir every 15 minutes.

This popcorn recipe makes 7 cups and is the perfect addition to your next movie night.

Buffalo Popcorn

Ingredients

  • 2 tablespoons vegetable oil
  • ¼ cup Eden Popcorn
  • ½ cup vegan butter
  • ½ cup brown sugar
  • ¼ cup corn syrup or agave nectar
  • ½ teaspoon kosher or fine sea salt
  • ¼ cup Buffalo sauce
  • ½ teaspoon cayenne pepper
  • ½ teaspoon baking soda

Instructions

  • Heat oil in a heavy pan and add the popcorn. Cover pot and wait for kernels to pop. Shake pot occasionally and wait for kernels to stop popping.
  • Line two baking sheets with foil and preheat oven to 250°F. Divide popped corn between the two prepared baking sheets.
  • Melt vegan butter, brown sugar, corn syrup, and salt in a small pan and bring to a boil, stirring constantly. Once boiling, let boil for 5 minutes without stirring. Stir in the Buffalo sauce and boil for another 2 minutes.
  • Remove from heat and stir in the cayenne pepper and baking soda. Divide the sauce evenly among the two sheets of popcorn. Stir to coat.
  • Bake for 1 hour, stirring every 15 minutes.
