Quick & Easy Rice Pudding

Rice pudding is a treat that I like more and more each time I have it. This Quick & Easy Rice Pudding is my new favorite recipe that I can eat both as a dessert or breakfast. The sweetness from the fruit and the creaminess from the milk makes this the ultimate comfort food.

To make this recipe you first start out by combining the Eden Brown Rice Flakes, milk, and maple syrup in a saucepan and simmer for 5-6 minutes. Once the mixture thickens take off the heat and stir in the butter and vanilla until the butter melts. Then you stir in the Eden Organic Raisins, Eden Organic Dried Apricot, and Eden Dried Tart Cherries and let the mixture cool. Garnish on top with some more dried fruit and cinnamon, you can serve this recipe warm or cold. Personally, I like it warm for breakfast and cold for dessert.

Ingredients

  • 1 ½ cups Eden Brown Rice Flakes
  • 3 cups milk of choice
  • cup maple syrup
  • 2 teaspoons butter or dairy-free butter
  • 2 teaspoons pure vanilla extract
  • ¼ cup Eden Organic Raisins
  • ¼ cup Eden Organic Dried Apricots , chopped
  • ¼ cup Eden Dried Tart Cherries
  • Ground cinnamon , for garnish

Instructions

  • Combine rice flakes, milk, and maple syrup in a saucepan. Bring to a simmer. Let simmer for 5-6 minutes or until the mixture thickens. Take off the heat and stir in the butter and vanilla, stirring until the butter melts. Stir in the dried fruit, saving some to garnish on top. Let cool. Garnish with the remaining dried fruit and ground cinnamon.
  • Serve warm or refrigerate and serve cold.
