I really love sandwiches. When I first went gluten free many years ago, I gave up sandwiches because there just wasn’t any good gluten free bread available. I would spread egg and tuna salad on rice cakes and wrap lunch meat and cheese in lettuce, but seriously, that’s just not a sandwich!
I don’t know about you, but my days are busy! It seems like sometimes I just don’t have time to cook dinner. But we need to eat and if I am going to eat something, it better be delicious!
