I really love sandwiches. When I first went gluten free many years ago, I gave up sandwiches because there just wasn’t any good gluten free bread available. I would spread egg and tuna salad on rice cakes and wrap lunch meat and cheese in lettuce, but seriously, that’s just not a sandwich!  Since I love sandwiches so much, I created a gluten free Thai chicken grilled cheese sandwich recipe.

I particularly love grilled cheese sandwiches. Sometimes I keep it simple – just cheese, mayo, butter, and bread – and sometimes I get creative. At times when I am feeling whimsical I dream of opening up a gluten free grilled cheese sandwich restaurant – grilled cheese sandwiches from around the world.

This recipe is Thai inspired – sort of like a grilled cheese sandwich and a chicken satay got married and had a baby. A really tasty, gooey, yummy baby.

For the chicken part, I took some leftover roasted chicken (I almost always have a rotisserie chicken on hand) and mixed it with some Sunbutter (keeping the sandwich nut free as well), orange marmalade, Thai basil leaves, and sriracha – how could that not be good?

If this recipe seems odd to you then I urge you to just take a leap of faith and give it a try. Come on, trust me. After all, I may someday be the world’s first gluten free grilled cheese restaurant owner.

Ingredients

  • 1 tablespoon butter or dairy free butter at room temperature
  • 2 slices gluten free bread
  • ½ cup grated sharp cheddar cheese or dairy free cheese shreds
  • ¼ cup cooked chicken chopped and warmed
  • 2 tablespoons Sunbutter Natural Crunch or Creamy
  • 1 tablespoon orange marmalade
  • 1 teaspoon sriracha sauce
  • 3 large Thai basil or regular basil leaves minced

Instructions

  • Butter one side of each slice of bread. Sprinkle half the cheese on the unbuttered side of one slice of bread.
  • Combine the chicken, Sunbutter, marmalade, sriracha, and basil, mixing well. Scoop this on top of the cheese, top with the remaining cheese and the unbuttered side of the other slice of bread.
  • Heat a skillet over medium heat. Place the sandwich in the pan, cover, and cook until the bottom slice is golden brown, 2-3 minutes. Flip and cook until the other side is golden and the cheese has melted.
  • Eat immediately.

    What brand bread do you use? I’m still trying to find one I like since being diagnosed Celiac and they’re so expensive…

      I used Canyon Bake House for this recipe. But you’re right, gluten-free bread can get expensive.
