Quinoa Crunch Parfaits

Ingredients

  • 1 cup uncooked quinoa
  • Juice of 1 fresh lemon
  • 2 teaspoons ground cinnamon
  • 2 cups dairy-free yogurt , such as So Delicious
  • 2 tablespoons shelled pistachios
  • 1 tablespoon coconut flakes
  • 2 teaspoons ground flax seeds , such as Barlean’s
  • 2 teaspoons lemon zest

Instructions

  • Cook quinoa according to package directions. Remove from heat and drizzle with lemon juice.
  • In 4 ramekins or glasses, layer the cooked quinoa, cinnamon, and yogurt. Top with pistachios, coconut flakes, ground flax seeds, and lemon zest. Serve chilled.
