Spring Vegetable Beauty Bowl


  • Warm brown rice
  • Sea salt, to taste
  • Cooked chickpeas, lentils, or cannellini beans
  • Assorted spring vegetables such as:Asparagus, lightly steamedSprouts, Baby carrots- cut into matchsticks, Radishes, thinly sliced Fresh herbs, finely chopped
  • Your favorite dressing, to taste (or use extra-virgin olive and lemon juice)


  1. Place the brown rice in a bowl.
  2. Sprinkle with a pinch of sea salt.
  3. Top the rice with the chickpeas and vegetables.
  4. Drizzle with desired dressing and add another pinch of sea salt, if desired. Enjoy.
