Ingredients

For the carrots:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove minced
  • 1 teaspoon minced fresh ginger
  • Sea salt to taste
  • Freshly ground black pepper
  • to taste
  • 1 pound carrots halved lengthwise

For the salad:

  • 2 cups arugula
  • 2 cups baby spinach
  • Juice of 1 lemon
  • 2 teaspoons extra-virgin olive oil
  • 2 tablespoons chopped walnuts
  • 2 teaspoons sunflower seeds

Instructions

  • Heat a grill to medium. Toss all of the ingredients for the carrots together until the carrots are well coated. Grill the carrots until tender, about 15 minutes, flipping once halfway through. Remove from grill.
  • In a large bowl, combine the ingredients for the salad. Arrange the salad on plates or in bowls and top with the grilled carrots.
