Simple Veggie Fritters

Fritters, a traditionally deep-fried dish, are a wonderful addition to your brunch menu as a substitute for potatoes or hash browns. These are made with a healthy twist by adding extra veggies and searing them in coconut oil instead of frying.

Ingredients

  • 1 cup grated sweet potato
  • ¾ cup grated carrots
  • ¾ cup grated zucchini
  • 1/3 cup quinoa flour or gluten-free flour of choice
  • ¼ cup chopped scallions
  • 1 large egg lightly beaten
  • ¾ teaspoon kosher or fine sea salt
  • ½ teaspoon freshly ground black pepper
  • Coconut oil for cooking

Instructions

  • In a large bowl, combine the sweet potato, carrots, zucchini, flour, scallions, egg, salt, and pepper. Stir the mixture together with a spatula or wooden spoon until combined.
  • Add 2 tablespoons of coconut oil to a large skillet over medium-high heat. Once the oil is hot, form small patties out of the vegetable mixture in your hands and add them to the pan. Cook the fritters until golden brown, about 2-3 minutes. Flip and cook for an additional 1-2 minutes. Transfer the fritters to a cooling rack. Repeat this process with the remaining vegetable mixture, adding more oil to the pan as needed.
  • Serve slightly warm as a side dish.
