Roasted Garlic Spoonbread
You may be surprised to learn that I still use my slow cooker pretty extensively in the hot summer months. Here is a delicious bread recipe to try this summer.
Roasted Garlic Spoonbread Recipe
Servings: 4 Servings

Ingredients
- Gluten-free nonstick cooking spray
- ¾ cup gluten-free yellow cornmeal
- 1 tablespoon granulated sugar
- ½ teaspoon cayenne pepper
- 2 cups milk
- 2 tablespoons unsalted butter melted
- 4 large eggs
- ¼ cup grated Parmesan cheese
- 15 garlic cloves about 1 head, peeled but cloves left intact
Instructions
- Use a 2-quart slow cooker coated with cooking spray, or a 6-quart slow cooker with an inserted baking dish coated the cooking spray.
- In a large mixing bowl, whisk together the cornmeal, sugar, cayenne pepper, milk, butter, and eggs until a batter forms. Stir in the cheese and garlic cloves. Pour the batter into the greased slow cooker insert or baking dish. Cover and cook on low for 4-5 hours or on high for about 2½ hours. Your spoonbread is finished when the center is set and a toothpick inserted comes out clean.
- Serve warm or at room temperature.
