Beer Braised Brisket

Ingredients

  • 1 3-4 pound beef chuck or pot roast
  • 5 garlic cloves peeled and chopped
  • 2 tablespoons dark brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon instant coffee granules
  • 1 teaspoon kosher or fine sea salt
  • 1 medium white or yellow onion peeled and sliced into thin rings
  • 1 12 ounce bottle gluten-free beer
  • Hot mashed potatoes for serving

Instructions

  • Use a 4-quart slow cooker. Put the roast into the insert. In a small bowl, combine the garlic, sugar, paprika, cumin, coffee, and salt. Rub this paste onto all sides of the meat. Separate the onion rings and place on top of the meat. Pour in the beer. Cover and cook on low for 8-10 hours, or until the meat has relaxed and becomes fork tender. Serve over a bed of mashed potatoes with a ladle full of the juices from the slow cooker.
