An easy gluten free chicken tortilla soup recipe with only five ingredients, not including water, oil, salt & pepper, cooked in the slow cooker.

Chicken Tortilla Soup Recipe
Ingredients
- 2 chicken breast halves, diced
- 1 15-ounce can corn (with ¼ cup of liquid from the can)
- 1 15-ounce can black beans, drained and rinsed
- 1 10-ounce can tomatoes and chilies (such as Ro-Tel)
- 4 cups gluten-free chicken broth
Instructions
- Use a 4-quart slow cooker. Place the chicken pieces into the insert, and add the corn and ¼ cup of liquid from the can. Add black beans and tomatoes and chilies. Stir in the chicken broth.Cover and cook on low for 6-7 hours or on high for about 4 hours. (If you don’t mind adding an extra ingredient, serve with shredded cheese and/or sour cream – dairy-free or regular.)
