Gluten Free Avocado & Shrimp Starters Recipe
We all have heard that oysters are an aphrodisiac, but did you know other reported aphrodisiacs include olive oil, chocolate, coffee, shrimp, chilies, honey, and avocados? The following recipe is part of a three-course romantic dinner for two. Click here for the main course and here for the dessert. Gluten Free Avocado & Shrimp Starters Recipe

Ingredients
For the shrimp cups:
- 1½ cups salted water
- ¼ cup basmati rice
- 1 small avocado pitted and sliced
- 1 tablespoon lemon juice
- ½ bunch fresh coriander leaves finely chopped
- ¼ ripe mango peeled, pitted, and sliced
- 6 black tiger shrimp peeled, deveined, and sautéed
For the dressing:
- 1½ tablespoons lemon juice
- 1 tablespoon honey
- 1½ tablespoons sesame oil
- Pinch of chili powder
- Kosher or fine sea salt
- Freshly ground black pepper
Instructions
- Put a large pan of salted water on high heat and bring to a boil. Rinse the rice in a colander under running water until the water runs clear. Add rice to the boiling water and boil for around 12 minutes. Remove from heat, drain in a colander, and set aside.
- Place the avocado slices in a bowl and squeeze the lemon juice on top to prevent discoloring.
- Prepare 2 small serving bowls. On the bottom of each, place the following layers: avocado, rice, coriander, mango, and shrimp.
- In a separate bowl, mix the lemon juice, honey, and sesame oil. Season with chili powder, salt, and pepper. Pour over the shrimp cups and refrigerate for 1 hour to set before serving.
