Ingredients

For the shrimp cups:

  • cups salted water
  • ¼ cup basmati rice
  • 1 small avocado, pitted and sliced
  • 1 tablespoon lemon juice
  • ½ bunch fresh coriander, leaves finely chopped
  • ¼ ripe mango, peeled, pitted, and sliced
  • 6 black tiger shrimp, peeled, deveined, and sautéed

For the dressing:

  • tablespoons lemon juice
  • 1 tablespoon honey
  • tablespoons sesame oil
  • Pinch of chili powder
  • Kosher or fine sea salt
  • Freshly ground black pepper

Instructions

  • Put a large pan of salted water on high heat and bring to a boil. Rinse the rice in a colander under running water until the water runs clear. Add rice to the boiling water and boil for around 12 minutes. Remove from heat, drain in a colander, and set aside.
  • Place the avocado slices in a bowl and squeeze the lemon juice on top to prevent discoloring.
  • Prepare 2 small serving bowls. On the bottom of each, place the following layers: avocado, rice, coriander, mango, and shrimp.
  • In a separate bowl, mix the lemon juice, honey, and sesame oil. Season with chili powder, salt, and pepper. Pour over the shrimp cups and refrigerate for 1 hour to set before serving.
