  • 6 medium apples , peeled, cored, and cut into 1-inch chunks (use a blend of apple varieties, such as Gala, McIntosh, and Granny Smith)
  • 2 tablespoons coconut oil , melted
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon sea salt
  • Coconut milk ice cream , for serving


  • Preheat the oven to 350ºF.
  • In a large bowl, combine the apples, coconut oil, cinnamon, nutmeg, and salt. Stir well to combine. Pour into a 9x13-inch baking dish. Bake for 20-30 minutes, stirring once halfway through, until soft.
  • Serve warm apples in bowls topped with coconut milk ice cream.
