Mashed Potatoes with Herbs & Garlic Oil

Ingredients

  • 3 pounds Yukon Gold potatoes, peeled and cut into chunks
  • cups milk or unsweetened almond or coconut milk
  • ½ cup butter or dairy-free butter
  • ¼ cup chopped chives
  • ¼ cup chopped fresh parsley, plus more for garnish
  • 1 tablespoon finely chopped fresh thyme
  • 1 tablespoon garlic oil*
  • Kosher or fine sea salt , to taste
  • Freshly ground black pepper , to taste

Instructions

  • Place the potatoes in a large pot and cover with water. Bring to a boil over high heat. Reduce heat to medium-low and cook at a gentle boil for 10-15 minutes or until fork tender. Drain well and transfer back to the pot.
  • Add the milk and butter. Mash with a potato masher until smooth (or until desired consistency is reached). Add the herbs and garlic oil. Stir to combine. Season to taste with salt and pepper. Transfer to a serving dish and garnish with parsley.

Notes

*Garlic oil can be found in many regular grocery stores, health food stores, and specialty shops.
