Beet & Feta Salad

Ingredients 

  • 4 tablespoons (60 mL) olive oil
  • 2 tablespoons (30 mL) red wine vinegar
  • 1 tablespoon (15 mL) Dijon mustard
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • 1 pound (454 g) cooked beets, peeled and sliced
  • 5 ounces (142 g) spring salad mix
  • 2 ounces (57 g) feta cheese, crumbled
  • ½ cup (62 g) roasted salted pistachios, chopped

Instructions 

  • Combine the oil, vinegar, and mustard with a large pinch of salt and pepper.
  • Toss the beets in a little of the dressing. Place the salad greens in a serving bowl and toss with the rest of the dressing. Add the beets and feta. Toss gently. Sprinkle with the pistachios and serve.
