Ingredients
- 4 tablespoons (60 mL) olive oil
- 2 tablespoons (30 mL) red wine vinegar
- 1 tablespoon (15 mL) Dijon mustard
- Kosher or fine sea salt
- Freshly ground black pepper
- 1 pound (454 g) cooked beets, peeled and sliced
- 5 ounces (142 g) spring salad mix
- 2 ounces (57 g) feta cheese, crumbled
- ½ cup (62 g) roasted salted pistachios, chopped
Instructions
- Combine the oil, vinegar, and mustard with a large pinch of salt and pepper.
- Toss the beets in a little of the dressing. Place the salad greens in a serving bowl and toss with the rest of the dressing. Add the beets and feta. Toss gently. Sprinkle with the pistachios and serve.
