Grilled Bruschetta Skewers

Ingredients

  • Gluten-free bread of choice , sliced into 12 bite-sized pieces
  • 12 grape tomatoes
  • 2-3 cloves garlic , crushed, to taste
  • Olive oil
  • Salt and freshly ground black pepper
  • 12 Pepper Jack cheese cubes or cheese alternative
  • 12 cilantro leaves
  • 12 (6-inch) wooden skewers

Instructions

  • In a medium bowl, combine the bread pieces, tomatoes, and garlic. Sprinkle with 2-3 tablespoons of olive oil, salt and pepper to taste and stir well to coat; set aside.
  • Brush grill pan with oil; heat over medium-high heat. Grill the bread pieces and tomatoes for 1-2 minutes, turning once, until they just start to char. Let cool.
  • Using a 6-inch wooden skewer, thread a piece of bread followed by a tomato, a cheese cube and a cilantro leaf. Repeat.
