Ingredients

  • 1 ¼ pounds bulk pork sausage
  • 4 tablespoons extra virgin olive oil , divided
  • 12 pieces of bacon , 2 per burger
  • 1, 15.5- ounce can Great Northern or Navy beans , drained and rinsed
  • Kosher salt
  • Freshly ground black pepper
  • 6 large fried eggs
  • 6 gluten-free English muffins , such as Food for Life brown rice English muffins

Instructions

  • Divide the sausage into 6 equal parts and shape into patties, about 3 inches in diameter and ¾-inch thick.
  • In a large skillet, cook the patties in a little olive oil until done. Remove from heat and keep warm.
  • Cook bacon according to package directions. Set aside and keep warm.
  • Add beans to a small saucepan with a little olive oil, salt and pepper and heat through. Keep warm.
  • Cook the eggs to your desired doneness.
  • Sandwich about ¼ cup of beans, a patty, an egg and two pieces of bacon between two halves of an English muffin.
  • Serve warm.

Notes

If you wish, make bean purée by blending the beans with olive oil, salt, and pepper in a food processor. Use instead of whole beans as you build the Breakfast Burgers.
