Hatch Chile Cilantro Lime Rice
Ingredients
- 1 cup long grain rice
- 2 cups gluten-free vegetable broth
- 1 bay leaf
- Kosher or fine sea salt
- 4 ounces Hatch Diced Green Chiles – mild or hot
- Zest and juice of 1 lime – zest finely grated
- ½ cup finely chopped cilantro
- 1 tablespoon butter or dairy-free butter
Instructions
- Combine the rice, vegetable broth, bay leaf, and ½ teaspoon of salt. Cook either on stovetop or in rice cooker. Add Hatch chiles, zest and juice of lime, cilantro, and butter. Fluff with a fork.
