Spicy Chicken Lettuce Wraps
Ingredients
- 2 tablespoons vegetable oil
- 1 pound ground chicken
- 1 red bell pepper , diced
- ½ cup grated carrots
- 4 green onions , chopped, white and green parts separated
- ¾ cup San J Gluten Free Szechuan Sauce
- Lettuce cups – bibb or romaine
- ½ cup peanuts , chopped
Instructions
- Heat oil in a large skillet. Add chicken and cook, stirring occasionally, until starting to brown, about 5 minutes. Add the pepper, carrots, and white part of the green onions. Cook until the peppers start to soften, about 5 minutes. Add the sauce, lower the heat and simmer until everything is hot and evenly coated.
- Serve in lettuce cups garnished with the green parts of the green onions and peanuts.
