I know that pumpkin pie time is right around the corner but I couldn’t resist a little prelude.

I decided that little handheld pumpkin empanadas were just the thing! Empanadas are stuffed pastries that are either baked or fried and are very popular in South America.

These quick pastries can be eaten for breakfast, tucked into a lunch box, enjoyed with afternoon tea or coffee and make a nice weeknight fall dessert.

Tis the season for all things pumpkin; every store I walk into these days reminds me of a pumpkin patch at harvest time.

There are many in our family that regards pumpkin as a favorite flavor. In fact recently we had four generations all seated around the table discussing the attributes of pumpkin pie. My g-kid Julian is a big fan and always requests it for dessert.

Unfortunately I don’t always have time to whip up a gluten free pumpkin pie. But I do always have time to whip up this tasty dessert – Almost Instant Pumpkin Mousse. This recipe takes about 5 minutes to prepare and really could not be simpler.

Gluten Free Pumpkin Soup

Gluten Free Easy Pumpkin Soup Recipe

There is nothing like a steamy bowl of soup to warm up a crisp fall evening.

This pumpkin soup has three ingredients and is ready in five minutes but no one needs to know this! It is rich, creamy (despite the lack of dairy) and hearty and I have no shame in taking a little help from organic canned pumpkin puree and gluten free chicken stock. To make this recipe vegan, use vegetable stock instead.

I couldn’t resist giving this soup some Halloween flair with spider webs. I just put some sour cream (dairy free is fine) in a small plastic squeeze bottle, gave it a shake to loosen it up a bit and then drew concentric circles on top of the soup. I then took a toothpick and drew lines through the circles; alternate the lines from the center out and then from the outside in. If you prefer a less Halloween-specific garnish, a dollop of sour cream and maybe a sprinkling of chives is quite lovely.
