Stove-Top Lemon Thyme Green Beans

Ingredients

  • 2 pounds green beans yellow wax beans, or a combination, trimmed
  • 2 tablespoons virgin coconut oil or unsalted butter
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1 tablespoon finely chopped fresh thyme
  • Sea salt and black pepper to taste

Instructions

  • Place the beans in a large skillet or sauté pan with about ½-inch of water.
  • Bring to a rapid simmer, cover, and steam until crisp and tender, 5-7 minutes.
  • Drain and return the beans to the pan.
  • Add the coconut oil, lemon juice, lemon zest, and thyme.
  • Toss to coat.
  • Season to taste with salt and pepper before serving.
