Ingredients
- 1 gluten-free vegan pizza crust
- ½ cup raw cashews , soaked for 2 hours
- Pinch of each: fine sea salt , black pepper, smoked paprika, and chili powder
- 1 (15-ounce) can vegetarian refried beans (optional)
- 2 cups romaine lettuce , thinly sliced
- 2 cups cherry tomatoes , chopped
- 1 small red onion , thinly sliced
- 1 ripe avocado , pitted and diced
- ¼ cup cilantro , finely chopped
Instructions
- Bake the crust according to recipe instructions.
While the crust is baking, prepare the sauce:
- Drain and rinse the cashews.
- Place in a high-powered blender and add ½ cup fresh water and the salt, pepper, smoked paprika, and chili powder.
- Blend on high until smooth and creamy.
- Add more water as needed to reach the consistency of sour cream.
- Remove the crust from the oven and immediately top with refried beans (if using).
- Sprinkle the remaining ingredients over the pizza and slice.
- Drizzle each slice with cashew cream sauce and serve.
