Almond Spinach Pesto

Ingredients

  • 4 cups baby spinach
  • ¼ cup slivered almonds
  • 4 tablespoons extra-virgin olive oil
  • 1 large garlic clove
  • Sea salt and freshly ground pepper  to taste

Instructions

  • In a food processor, pulse all ingredients until a pesto-like consistency is achieved – smooth but a little chunky if desired. Serve with gluten-free toast, crackers, or sliced vegetables.
